Black-Eyed Pea Gumbo
This is a wonderful recipe. Since my husband is a vegetarian, I added Tofurky-brand kielbasa, and it turned out great. We did notice, however, that the gumbo tasted the best the first night. It did not seem to get better as leftovers. Next time I may cut the recipe in half.
