Old Fashioned Coconut Cream Pie

I did not use coconut milk or corn starch as the reviews suggested, and this pie was heavenly! The consistency was fine with the flour and set up perfectly. I did, however, make my own whipped cream for the top. Delicious pie! Will make again and again. :)

Butternut Squash Risotto

A-M-A-Z-I-N-G. I doubled it (except for the chicken stock). It turned out great. My husband loved it. I never knew I could make something that tasted so gourmet. Thanks for this great recipe!

Colorful Fried Rice

This was amazing. I didn't use cold rice, though. I didn't add the parsley and I cooked the egg separately, like some other reviewers. It was awesome, and so easy. Thanks for this great recipe!

Carrot Burgers

These were amazing. A food processor is going to come in phenomenally handy for this recipe. I never expected these to taste so good. I plan to make them often and freeze some for the future. Thanks for sharing this recipe!

Sloppy Joes II

My husband and I loved this recipe. I had a lot of doubts about it at first. The catsup and mustard in it sounded questionable. But it was delicious! It was incredibly easy. We used pork instead of beef since we had leftovers and were trying to use them up. We plan to make this often!

German Potato Pancakes

These were awesome. However, the 1/4 c. of oil seemed like too much. I only used 3 large potatoes instead of 6 medium ones, and this made A LOT. I added an extra egg, too. I found these had a hard time staying together in the pan, though. Overall, my husband and I loved them and will make them again!

Easy Cajun Jambalaya

I loved this recipe. The only substitution I made was to put in scallops in place of the chicken breast. We just ate chicken the last few nights and wanted something different. This dish did have a kick to it, but not overly so. Jambalaya is supposed to be spicy. I meant to add a can of Rotel, but I forgot. In the middle of dinner, I told my husband I forgot it and told him I could add it in, and he said to just leave it. He liked it the way it was! I highly recommend this recipe. Very easy and good.

Simple Beef Flavored Gravy

Great gravy recipe. I have never been able to make one I've liked, until now. I halved this since I was just cooking for myself. I also used canned beef stock instead of the water and bullion. I didn't brown the onion first, I just put everything in together, and it turned out great and was super fast! I served it over rice.

Microwave Lemon Curd

What an easy recipe! I was watching "Whatever, Martha" tonight, and they were talking about lemon curd. I started getting hungry for it and decided to make it. I looked it up here and found this easy microwave recipe. I used Real Lemon juice instead of lemons, and I used no lemon zest. But I did use the rest of the ingredients. It came out great! It tastes like it took a lot more time to make. I lost track of how many times I took it out of the microwave, stirred it, then put it back in again. I think it was about 6 minutes that this took. I highly recommend this recipe!
