About this Cook
My name is Ashley, I'm an artist and mother of two fabulous boys. I live in Harrisonburg, Virginia where I'm lucky enough to be three blocks from our city's Downtown Farmers Market. Since we have four seasons, there are always yummy ingredients accessible. As a young girl I resisted being 'trapped in a kitchen', but as an adult I've really embraced cooking as another extension of my creativity. I also really appreciate a night out and don't mind spending money on fine dining. I love the atmosphere, service and am constantly in awe of chefs and what they are capable of presenting. I usually come away with something new I'd like to try at home!

Slow Cooker Scalloped Potatoes with Ham
Awesome! Made this veggie by omitting ham. Subbed cream of celery (with milk); used cheddar/mozzarella mix and added a handful of cheddar to top. Baked in oven per another reviewers recommendation @ 325d for 1.5 hrs. The top was crunchy, golden, cheesy goodness! Matched w/ creamy potatoes inside the texture was rockin'. Will make again for sure!

Grilled Salmon I
Love this- easy and quick enough for a school night! A few tips of my own: sub 1/4 c honey for the sugar; use fresh lemon juice (2tbs); Omit salt and opt for a clove or two of fresh garlic. I line my grill with foil, grill skin side up first, flip, and then top seared fish with thinly sliced lemon rounds for remainder of cook time. Delish!

Pork Chop and Potato Casserole
I used leftover barbeque pork tenderloin I had grilled the night before, sliced it and used it as the chops. I added fresh chives instead of onions and used the french fried onions on top- it was great! The barbeque flavor worked well with the recipe.
