About this Cook
By day I am a public school teacher so my time at home is limited and precious. I have two cooking personalities - one for the weekend and one during the week. During the week I cook either quick meals or meals that can be prepped ahead of time; but on the weekends I love to spend more time in the kitchen.
My favorite family cooking traditions
I now make my fiance's grandmothers dressing during the holidays. He doesn't cook nor does his mother, so I sat down with her and got her recipe as she told it to me. Other than that, I tend to not make the same recipes each holiday season because there are so many good recipes out there that I don't want to limit myself.
My cooking tragedies
If it can be messed up, I have probably done it; but I try not to do it in front of a lot of people. Cooking is science with food so if I don't mess up, I'm not being creative.

Garbanzo Bean Chocolate Cake (Gluten Free!)
My whole family really liked this cake - and I liked that it wasn't full of fat and useless carbs! Loved the texture - less greasy and heavy than a brownie, but lighter and more fudgey than a cake. I did make a few additions, which is why I only gave it 4 stars. Being picky, I cooked dried garbanzo beans because they have a nuttier taste than the canned beans. My additions are the following: I did not add salt to the beans while they cooked, so I had to add 1/2 teaspoon of salt to the bean and egg mixture. For a richer flavor, I added 1 teaspoon of vanilla to the bean mixture and I added 1 teaspoon of espresso powder to the chocolate while it was melting.

Crunchy Caramel Corn
My range needed repairing, so I tried this recipe since it's close to the recipe I have always used. Very, very disappointed because this was not crunchy - the coating was, but the popcorn was not. I will stick with the "tried and true" for this.

Real N'awlins Muffuletta
Made the olive salad and set out of a tray of meats and cheeses for our family's "sandwich night". Loved the olive salad beyond anything reasonable...it was even good alone in a sandwich!
