Cream Puffs

I made the puffs, using the tricks that everyone mentions, poking the holes, letting them sit in the oven to dry out and then I did something totally different with them, I was attending a party that evening and needed to bring appetizers, I made dozens of these little puffs, after they were cooled I sliced off a small part on the top of each and filled some with almond chicken salad, and some with a feta spinach mixture, and some with shrimp salad and they were a huge huge hit.......Next time I will try the dessert version....
