Pear and Blue Cheese Salad

This is my new favorite salad! The dressing is what makes it really unique. I have served this numerous times at special occasions this past year and it has been a hit every time. Often one of the first empty dishes at a potluck :)

Mock Champagne

This is a very easy and very tasty punch for parties and showers. It has become the baby shower standard in our family. It is nice and light, particularly for summer. I like to substitute sparkling grape juice for the white grape juice. Also, to make it easier, I dispense with the complicated ice ring and place a raspberry or strawberry slice into ice cube trays, fill them with ginger ale and pop the cubes into the punch bowl.

Easy Caramelized Onion Pork Chops

These turned out really moist and delicious. I followed previous advice and substituted beef broth for the water, but not sure I would do that again. It was a tad on the salty side - maybe reduce the salt? But they certainly were juicy and flavorful.

Chip Chicken Lollipops

I served these to a large group of kids and they were a huge hit. I didn't bother with the lollipop sticks, just cut the chicken into "nugget sizes". I took advice from previous reviews and used parmesan garlic potato chips. Also, I needed more chips than the recipe asks for - I wanted them to be nice and crispy. Another bonus - my husband loved the leftovers!

Cheeseburger Meatloaf

I made this for a large group of children for a community center program in our town and it was a HUGE hit. They gobbled every bit of it. Made with lean ground beef and paired with "oven" fries and fresh green beans, it was pretty healthy as well. I followed previous advice and rather than do the jelly roll, pressed half the meat into the bottom of a 13x9 pan, then used 2 cups of cheese (3 seemed too much?). I then pressed the remaining meat into a rectangle on wax paper and turned it on top of the cheese making sure to seal edges. Because I was baking three pans at once, I still baked it for a little over an hour, but wonder if when baking one pan less time would be required.
