Eggplant Parmesan II

Yum!! I'm always looking for tasty and filling vegetarian meals... and this is it! I did prepare it a little differently because I was only working with one eggplant. I increased the bake time and temp to 10 min per side at 400. And instead of putting everything together in a baking dish, I just made individual rounds. Kept the eggplant on the baking sheet, topped each with a good amount of sauce, and a slice of fresh mozzarella. Then back in the oven for a few min to melt the cheese. They looked pretty and tasted amazing!!

Eggplant Delight

This is a really good vegetarian meal! Like others, I made some changes.. I added 2 large cloves of minced garlic to the last 5 min of sauteing the onion. I seasoned the eggplant with salt and pepper in the pan, then with a sprinkle of parmesan cheese after cooked. I also sliced two tomatoes, and warmed them in the same pan. Topped it all together, and it was awesome! Will definitely make often.

Blueberry Brie

AMAZING! I used seedless raspberry preserves, which I topped with fresh blueberries and drizzled with honey. Increased the baking time to 20 minutes so the cheese just oozed out when cut. I know I didn't quite stick to the original recipe, but I had to post because it was soooo good. I served it for company today and between the 6 of us, it was gone it minutes.

Tzatziki VII

I'm sorry, but I just didn't like this recipe. I've had tzatziki in restaurants several times and loved it, but this was not even close. I think the lemon and garlic measurements are way off. I tried adding sugar to take off the bite, but the batch I made was not even salvageable.

Sloppy Joes II

Can't go wrong with this recipe! I used ground turkey, which I browned with minced garlic, worchestershire sauce, and double the onion and green pepper. I had almost 1.5lbs of turkey so I also doubled the sauce, which was the perfect amount! Served open faced on kaiser rolls with a slice of fat free american cheese melted on top. YUM

Egg Salad Sandwiches

I can't imagine a better recipe for egg salad! I used light mayo and cut it down to about 2/3c. Also used finely chopped fresh onion instead of dried flakes, and cut the pepper in half. I won't make this often because of the fat content, but it really is delicious!

Roasted Garlic Cauliflower

This is good, but not as great as I expected based on the reviews. I usually steam cauliflower whole in the microwave, top with a bread crumb/garlic powder/butter mixture and broil for a two minutes. I wanted to try a different method and had high hopes for this recipe, but it just didn't wow me.

Creamy Broccoli Soup

This soup was just ok. I used 3/4c skim milk and 1/4c fat free h&h. I also used reduced fat cheddar. Maybe it had something to do with the changes I made, but this soup was just a little bland for me.

Frank's® Red Hot® Buffalo Chicken Dip

Great dip for parties- can't wait to use it during football season! I used low fat cream cheese and light dressing. Also, I didn't have blue cheese on hand so I used feta instead. I prefer blue, but for those who think it's too pungent, the feta is much more mild and still tastes great in the dish.

Missy's Candied Walnut Gorgonzola Salad

This salad is awesome! Like others, I added apple slices. The candied walnuts are the best part! (I did cut down on the sugar though) I loved them so much, I ended up making an extra double batch which I served on top of baked brie with raspberry preserves. Amazing!!

Chicken Fiesta Salad

I usually make taco salad with vegetarian crumbles, but this is so much better!! Instead of the mexican style corn and the salsa, I used frozen corn and a can of southwest style diced tomatoes. I also sauteed about 1/2 cup chopped onion before throwing everything else into the pan. Cooked the chicken on the grilled, cut it into cubes, and mixed it right in with everything else. I loved this meal - feels like you're being bad, but it's actually healthy!

Aussie Chicken

Amazing!! I did a quick version with what I had on hand. I seasoned the chicken with garlic powder and cooked it on the grill. I omitted the corn syrup from the sauce, used light mayo, and a little less mustard than called for. I didn't have mushrooms, so instead I sauteed half a large onion and a green pepper, both sliced thin. I omitted the bacon and only used 1 cup of cheese to cut back on fat. Threw it all together and broiled it in the oven for 2 minutes. It was sooooo good and much healthier than following the recipe exactly. Everyone loved it and I can't wait to make it again for company!

Croutons

I had no idea making your own croutons was so easy! I used french bread and added some parsley flakes for color. I ended up eating them by the handful while making the salad :-)

Cream Corn Like No Other

This is so tasty, I could make a meal out of it! I used fat free half and half, splenda, and margarine to cut down on the calories. I was skeptical about adding the parmesan cheese, but I'm glad I did. It wasn't overpowering at all. Yum!

Blueberry Crisp II

I made this for a BBQ yesterday and it got lots of compliments! I used 6 cups of frozen blueberries and doubled the topping mixture. I also used light mayo to cut down on the fat. I ended up baking it in a 9x13 dish for 50 minutes. It came out great and I will definitely make it again. One word of warning- don't expect blueberry crisp. This is much more like a cobbler... kind of gooey, which is what makes it so good!

Mom's Brussels Sprouts

This is a really good, healthy side dish! I steamed fresh brussels sprouts, which I think makes a big difference. For the sauce, I used light margarine and cut the brown sugar to 2 tablespoons. I definitely recommend cutting the sprouts in half before coating with the sauce. It allows the flavor to soak in.

Seven Layer Gelatin Salad

Jello is about as basic as it gets, but adding the evaporated milk makes it sooo much better. I like to do one red and one blue made with water, in separate pans. Once firm, I cut into cubes and put them into a mold. I cover them with a double batch of pineapple (or some other light color) mixed with the evaporated milk. Looks very fancy when you cut the mold!

Lemon-Maple Butternut Squash

This is such an easy way to turn plain old butternut squash into a dinner party worthy side! I was worried that the maple syrup might make it too sweet, but it was the perfect amount. I sprinkled about 1/3 cup chopped pecans on top which really made this dish complete. Yum!

Cream of Fresh Asparagus Soup II

I've made this soup several times and everyone always loves it! I like to saute the onion, along with 3-4 cloves of garlic, for about 5 minutes before adding the broth. Before pureeing, I set aside at least 1/2 cup of the asparagus to add back to the finished soup. I also use fat free half & half instead of milk. One time, I didn't have any sour cream on hand so I just omitted it and added about 1/4 cup parmesean cheese instead. It was still excellent and the cheese was a good addition.

Roasted New Potatoes

This is a really great side dish. I doubled the amount of thyme, rosemary, and salt. Also used garlic powder instead of minced because I was in a hurry. Once on the pan, I sprinkled some paprika on top for color. MAKE SURE you turn these every 5-10 minutes when cooking or the bottoms will be charcoal! With the changes, this a 5 star recipe. *Update* I made this again and threw in an extra large onion, sliced thick. They caramelized in the oven and it was sooo good!
