This was excellent. I was not very confident about this recipe initially because it was my first crockpot endeavor and most of the ingredients are canned, which made me fear that this was going to taste like canned soup. I also used packaged taco mix and frozen chicken breasts in this recipe. It was fast enough for me to put together between school and work (20 minutes to eat lunch and prepare dinner) and when I got home from work, the entire apartment smelled like delicious chili. I served it with tortilla chips and homemade guacamole and it was fabulous. My boyfriend liked it, too, so it is definitely going into the rotation. Perfect for a rainy day in Seattle, but I can see it shining as a summer potluck chili, too.

I thought this recipe turned out great! The apples gave it a wonderful tang, the pineapple and oj concentrate made it sweet enough, and the carrot gave great texture. (Next time I make it I will definitely add more carrot.) I also loved that the amounts weren't fussy at all (I made two servings and it was easy).
