About this Cook
I am the lucky mother of six absolutely fabulous and wonderful children; three beautiful daughters, and three handsome sons. I am a jack of all trades, community involvement, nutritional freak, tree hugging, nature loving, stay at home mom who loves to live well, love much, and laugh often.
My favorite things to cook
BREAD!!! Japanese dishes such as gyoza, sushi, and oyaku don buri. Italian is great as well, like lasagne, chicken alfredo, and scampi with linguini. Danish foods come from my native danish mother-in-law, such as frikadellar (meatballs), rod grod med flod (berry pudding with cream) and smor brod (open faced sandwiches of all kinds. Then there are the standard American foods, like Dutch oven cooking, gourmet burgers, pork chops, and all kinds of chicken dishes. Pie is a favorite family dessert, and we lean toward those sweetened only with fruit (my husband can't have sugar).
My favorite family cooking traditions
We try to make everything we cook as highly nutritious and tasty as possible using whole grains, vegetables, fresh garden herbs, and fruit juices. We ABSOLUTELY avoid high fructose corn syrup at all costs, and bleached white flour is a curse word. If we must use white, we use unbleached.
My cooking triumphs
You'll have to ask my family, but they tell me on a regular basis that, quote, "Mom, your cooking rocks!"
My cooking tragedies
I left the eggs out of rice meatballs once and they crumbled into a brown mass (20 years ago). I was pregnant at the time, and I burst into tears. My husband consoled me and ate them anyway telling me how good it was the whole time. Bless his heart. My cooking often mirrors my mood, so it's a good thing that I have a native cheerful disposition. (It tends to be a little dismal if I cook in a bad mood.:)

Creamy Irish Potato Soup
My family of eight loves this tasty and economical soup, and we make it regularly. We sometimes add bacon bits to our individual bowls for extra flavor. (Note-- It's nearly impossible to make something that everyone in this family loves.) Thanks for the recipe!
