Kai Kang Dang (Chicken Curry with Coconut Milk)
I agree with some others that there is to much coconut milk. Next time, instead of the 2 cups of coconut milk, I'll use chicken broth. I used mushrooms, spinach and bell peppers and other than being too sweet it worked well

Fig and Ricotta Crostini
I agree with some others - this is rather bland. Maybe some cinnamon mixed into the ricotta would liven it up?? Any other suggestions welcome as I would like to see this idea work.

Vanilla Port Poached Figs with Honey Cream
This recipe is easy and amazing. The flavors blend together well without overpowering each other. This recipe also works great with pears.
