Banana Pudding I

This is a very easy pudding recipe. I love how versatile it is, don't like bananas? Make it a vanilla pudding! The only thing is the written recipe may be difficult for new pudding cooks, i.e. how to add ingredients and when to stop cooking is vague.

Creamy Beet With Dill Soup

I wish 4.5 stars was an option. I didn't have any chicken stock so I made a tomato broth by watering down marinara which was really yummy. My pinch of sugar was heavy handed and too much for this recipe, so it turned out a little sweet for my taste, but definately delicious. I garnished with shredded mozarella cheese which was really pretty with the raspberry color. Definately a keeper of a recipe.

Coffee Butter Frosting

Fabulous as an alternative frosting for German Chocolate cake. Added just a touch of vanilla extract to make the flavors pop a little more.

Butter Balls I

Very yummy! I only rolled in white sugar and added a drop of almond extract to the dough. Recipe not well-written and did not make 6 dozen, only about 2 1/2 dozen.

Eggplant Croquettes

Made a 1/2 batch, used Panko & herbs instead of Italian breadcrumbs, and fresh parsley instead of dried. Served with a cream sauce of sour cream, milk, lemon juice, dill, and 3 drops hot sauce. Scrumptious!

African Curry

Great for the 2 of us with conflicting palates - I love exotic foods, my hubby prefers traditional American. I didn't have enough chicken so I used a couple whole skin-on bone-in chicken parts and hot Italian turkey sausage, browning before adding the onions, rmeoving and re-adding. Also added a touch of collards and okra.

Homesteader Cornbread

My baking powder may have been bad, so it turned out more like a spoon bread. Still pretty good though. Next time I'll turn the temp down to 375, teh outside was a little crunchier than I like it.

Banana Custard Pudding

3 1/2 really. I allowed to cool to room temp, then folded in banana and poured into a pie shell. Far too sweet for this sugar junkie, and a little runnier than I wanted it for a banana cream pie. Can't possibly be made in 20 minutes if it needs an hour to cool. Takes longer than that just to prepare. Start at least 2 hours before serving time.
