I was amazed that the clip art that allrecipes provided for the picture on the profile could bear such a striking resemblance to me. Just kidding! I love allrecipes! I'm ashamed to tell you how many cookbooks I have lining my bookshelfs and am still drawn to purchase more, but when I want to try something that I need a recipe for, I'll run to the allrecipes site.
My favorite things to cook
Love to bake, make mostly quick & easy for dinner, but if I have all the ingredients for a better-than-hamburger-helper meal I enjoy that too.
My favorite family cooking traditions
I love making a yam casserole for our family Thanksgiving git together 'cuz no one else in my family likes it, so I make one that I really like and pig out on it the week after. When we get together for New Years we have pork & saurkraut with a big bowl of mashed potatoes.
My cooking triumphs
My mom grew up in Punxsatawny, PA, in coal country, out IN the country. She tells me that her mom could take a possum and make it taste mighty fine. Well my mom is just as good a cook or better than my grandma was. One day she told me that I cooked just like her (my mom, that is). That was a triumph to me.
My cooking tragedies
I wanted to try a corn muffin recipe for a family dinner, so I tried it out here at home. I decided to have the muffins for dinner and prepared a pot of chili to complement them. I used a chili mix package of mysterious origin in my cupboard that looked like it had been in there since '87. Seasonings don't go bad, right? Not only was the chili practically inedible but the corn muffins were pretty horrendous. Before dinner my daughter saw the empty package from the chili seasoning on the counter and asked if I wanted to throw it away. I said no,I wanted to wait and see if we liked the chili and I'd buy it again. LOL!!

White Chocolate Chip Oatmeal Cookies
These were great even after I made major changes/substitutions. I used splenda in place of the white sugar, substituted apple sauce for 1/2 of the butter, walnuts for the pecans and only used 1 cup mini chocolate chips instead of the 2 cups white chocolate chips. Some of the changes I made because that's what I had, and some because I wanted a "lighter" cookie. I also refrigerated the dough overnight before baking. Next time I'll try using 1/2 whole wheat flour. (Just fyi, for anyone who hasn't done the apple sauce substitution for fat in a recipe: I always take a coffee filter and drain the excess liquid off the apple sauce before using in my baking.) The rest of the family said, "these are really good!".

Banana Nut Bread
Yummy! And especially yummy because it's so easy to throw together whenever I have ripe bananas going to waste because noone wants to eat them. My family loves this recipe. So far, yellow cake mix is our favorite to use, although I did try it with chocolate cake mix once.

Chili I
Great chili. I had to substitute stew meat that I had on hand for the beef sirloin and red cooking wine for the beer (1/4 cup). Then I forgot to get the hot chili peppers at the grocery store, so I threw in about 1-2 tablespoons of chopped jalapeno pepper that I had in my freezer. I simmered it for about 2-4 hours then put in crockpot for the rest of the evening. Unfortunately, my husband and I only got to have one bowl of this great chili, 'cuz it won 2nd place at our church's annual chili cookoff and of course, everyone wanted to try it and we went home with an empty pot!
