Golden Sweet Cornbread

The name doesn't lie; it is golden and sweet. Made the recipe exactly as stated and it came out perfectly. I ate almost half the pan by myself throughout the day! Oh no!

Best Big, Fat, Chewy Chocolate Chip Cookie

I didn't make any changes (though, I did refrigerate before baking). My first batch was a little underdone because I am always afraid to leave cookies in too long. My second and a half batch were perfect. You can really let the cookies get brown and they will still be chewy--not crispy! Awesome. When it says in the recipe to put the cookies 3" apart, they are not kidding. These are big cookies, so make sure to give them plenty of room.

Molasses Bran Muffins

These are really good! I have quite a sweet tooth, and although these muffins aren't particularly sweet, I didn't find them to need any extra sweetener. The only change that I made was that I used 1tsp baking powder and 1/2 tsp baking soda instead of 1.5 tsp baking soda. With that little change, this recipe is awesome. I will definitely make these muffins again.

Eggplant Parmesan II

Simple flavors, but tasty nonetheless. I cut the recipe in half and it still made A LOT of food. I only used one eggplant and it took two cookie sheets to bake and provided me with two FULL layers in a 13"x9" dish. Also, I left the skin on because of its nutrients, and it tasted great.

Mock Tuna Salad

My husband and I loved this recipe. (It doesn't taste like tuna, but it doesn't need to. It's delicious in its own right) Our only change was that we added extra mustard because we love mustard.

Quick Chicken and Dumplings

I love this recipe! I've made it twice already. The first time, it burned a little on the bottom, so the second time, I stirred occasionally while the dumplings were cooking. I converted it to a vegetarian recipe by using seasoned baked tofu instead of chicken, which I added at the end instead of cooking the whole time and just cream of mushroom soup instead of chicken and mushroom. Great and easy comfort food.

Sean's Falafel and Cucumber Sauce

This turned out so well! I didn't use coriander or parsley because I didn't have any in the house. I personally felt that the amount of cumin was too much, and plan to cut it in half next time to suit my personal preference. The cucumber sauce is to die for!

Cheesy Potato Soup II

I used 1/2 broth 1/2 water and cheddar cheese. It was very thick because all my potatoes turned to mush. Next time I won't cook the potatoes so long. Oops. It was still tasty, though!

Light and Fluffy Spinach Quiche

Mine turned out really well. I used less spinach than the recipe called for because it was all I had in the house, and I added an extra egg, as some other reviewers had suggested. It turned out perfectly. Yum!

Black Bean Rice Burgers

My husband loved these! I thought they were good, but needed salt and pepper. Also, for me, the recipe made 6 large (but thin) burgers. I also added flour, as many reviewers suggested, and I didn't have any trouble with them falling apart.
