Macadamia-Crusted Sea Bass with Mango Cream Sauce
This was the first time I've had chilean sea bass and I was excited to try this recipe, but was left completely disappointed (and broke)! I followed the recipe almost exactly, however it came out flavorless and greasy (possibly due to the oils in the crust) I certainly loved the texture of the fish itself, but the crust and creamy sauce overwhelmed the dish and made it shockingly unhealthy. For those of you who will insist on trying this recipe, please due so first with a much less expensive cut of fish to see if you like it. And do not put vanilla extract in the mango sauce as others have suggested. The extract made it taste like a dessert sauce (although it tasted delicious on the scoop of vanilla ice cream I had afterward.) For a fish like this less is definately more. Do yourself a favor and save the time and money for something else. Prepare with a bit of olive oil, white wine, salt, pepper, lemon juice and parsley. It will cost less and taste much better

Downeast Maine Pumpkin Bread
This bread is incredible. I substituted 1/2 the oil for regular applesauce as others mentioned and reduced the sugar by about a quarter. It was absolutely wonderful. Very moist and flavorful and very very easy. I halved the recipe to make in one loaf pan instead of three smaller ones and had to bake it for 20 minutes longer at the same temperature. It was great! Will make again this weekend. Oh, and btw it seems like it would taste great with chopped pecans inside too. I'll try that next time

Boilermaker Tailgate Chili
I made this chili a few weeks ago, and ate it for lunch and dinner the whole weekend! The list of ingredients may seem exessive, but it is incredibly easy, and the flavors are so complex and layered, it's okay if you're missing a few of the components. For example, I omitted the dried basil and beer bc I didn't have it, and used just 1 bouillon cube instead of 4 to cut back on the sodium. Also, I used 2 cans of chili beans and substituted the third for a can of no salt added pinto beans and an extra can of rinsed and drained kidney beans. My boyfriend absolutely loved it too and when I brought some into work and heated it in the microwave everybody walked over to my desk to see what the wonderful smell was. Best chili ever!
