Sunshine Muffins

Simple and good - all the kids liked these. I used a "confetti" cupcake mix for some fun color. I used paper cups and they were a little tricky to take out without the muffin breaking up, but the kids didn't mind. I think foil cupcake liners would probably work best.

Spicy Beef Curry Stew for the Slow Cooker

I thought this was OK. I increased all the seasonings and it was still not tasty enough for me. My husband liked it and we ate without complaints, but nothing to write home about. I would definately use better quality meat than "stew meat."

Soft Oatmeal Cookies

Wonderful! I subbed 1/2 wheat flour, used 1/2 the salt, and made 1/2 the batch with raisins. I might decrease the salt a bit more next time. Everyone loved these!

Apple Oatmeal Cookies II

This is a great cookie for kids' afternoon snack. I added a bit of extra brown sugar and all the kids enjoyed these. Everyone agreed that they had a mufin-like texture. They stayed soft the next day.

Fresh Rhubarb Bread Pudding

We couldn't stop nibbling on this as it sat on the stove. I used 10 slices of the whitest white bread with crusts on and (and ends included) 1 1/4 cup rhubard and 3/4 cup raspberries from our garden and no nuts out of personal preference. Delicious - definately something I would serve with a brunch or with fresh whipped cream for dessert. Even hubby who stated beforehand that he doesn't like bread pudding couldn't resist! I did bake about 10 minutes longer than the recipe calls for, but the texture was great.

Fresh Cherry Cobbler

I made this for Father's Day as written and it was gone quickly. I made again decreasing the sugar in the cake part by about 1/4 cup and used a combo of rhubarb, fresh cherries, strawberries, and raspberries from our garden. It was delicious. Even though the fruit is added on top it bakes in the cake nicely. Best served fresh and warm!

Rhubarb Bread I

Terrific! I have made this several times for my family and my daycare kids. Everyone gobbles it up. I did substitute 1/2 applesauce for the oil and used some extra rhubarb. To save time I omitted the topping and just sprinkled a bit of cinnamon in the mix. No nuts due to personal preference. Very nice - not too tart!

Rhubarb Dumplings

Adults and children loved this. I made it for a bunch of people at my house and then took more to a Mother's Day party. It looks much more difficult than it is - in fact the children had fun making the dumplings and they turn out great even if they are not perfect or break open a bit. The only change I made was 1/2 brown sugar because I was almost out of white sugar. If you baste a little during cooking then the tops of the dumplings get a sugary brown crust - yum. Everyone agreed that it was not too sweet.

Yummy Pikelets

I made this for my kids and some others that I babysit. My son who eats anything, loved them with grape jelly, fresh banana slices, and fresh strawberry slices on top. The other 6 kids tasted them, ate all the toppings, and left the pikelets on the plate. I thought they were plain and gummy. I always use vanilla soy milk when making baked good so maybe this contributed to a poor result. I will try something different next time.

Bermuda Fish Chowder

Really good soup. I used perch, tilapia, and 2 cans of clams - no green pepper and chicken broth instead of clam juice. Not spicy - maybe next time I'll use 2 jalepenos.

Slow Cooker Chicken and Dumplings

My family definately thought this was a keeper! I used 1 can of biscuits and added in the last 2 hours of cooking. I pushed them down into the cooking liquid.
