I the happy mom of 3 young children 5, 3, & 2, and happy wife of 13 years. I babysit 3 other young children 4 days a week and we often have others stopping by so I always have taste testers. I really love to try new recipes to feed everyone and utilize all the fresh berries, fruit, and veggies from the garden.

Fluffy Pancakes
This is a fantastic pancake recipe. I think it will be our usual recipe from now on.

Peking Pork Chops
My family loved this. We shredded the pork and mixed it with white rice and peas. I thought the pork was a bit tough, but I probably cooked it too long.

Apple Oatmeal Cookies II
This is a great cookie for kids' afternoon snack. I added a bit of extra brown sugar and all the kids enjoyed these. Everyone agreed that they had a mufin-like texture. They stayed soft the next day.
