Low-Fat Lemon Poppy Seed Muffins

I'm rating these muffins 4 stars because I have made them a few times and I find that even though they are very good they are very heavy. I half the sugar and use fresh lemon and lemon zest for more flavour.

Chicken Diane Style

These were a big hit with myself and my boyfriend. I made up some mashed potatoes for that delicous sauce. Any leftovers didn't last long!

Delicious Black Bean Burritos

Vegetarian Four Cheese Lasagna

This was fantastic! My boyfriend really enjoyed it. We didn't have any pumpkin in season so I roasted acorn squash and substituted that instead. It's a keeper!
