About this Cook
I have a long commute to work, a husband with diabetes, a vegetarian daughter, another daughter in college, and an old dog. Cooking is a challenge every day. But, I live in a beautiful area of the Sierra Foothills so I don't mind the drive. Hubby is losing weight and getting the diabetes under control. Veggie daughter moved out on her own. College daughter, attending the University of Hawaii,will graduate this spring. Looking forward to vacation/graduation. And my sweet old doggie is the world's best tail-wagger and cleans up anything I drop on the kitchen floor. It's all good.
My favorite things to cook
I am the casserole queen! So quick & easy. Toss them together, bake them in the oven, serve. What could be better?
My favorite family cooking traditions
Old style southern cooking -- fried chicken or pork chops, mashed potatoes with gravy, green bean casserole, yams with marshmallows.
My cooking triumphs
Turkey coulibiac. Rolling out dough, rolling it up with the turkey mixture inside, baking to perfection. I'm not a baker so this was quite a project for me. Turned out wonderful but I never made it again. Casseroles for me!
My cooking tragedies
The time I made a scrumptious kentucky bourbon pecan pie in a leftover pie tin because I couldn't find my regular tins. When I pulled the pie from the oven, the pie tin bent in half, dumping the contents into the bottom of the oven. It was devastating! And a royal mess to clean up.

Slow Cooker Italian Beef for Sandwiches
I was surprised how well this recipe turned out. There were no leftovers! Two packets of Italian dry seasoning was plenty. I'll be making again for friends this weekend.
