About this Cook
I am 41, and lived in my hometown forever. I call myself a Mexican hillbilly. My mother is southern and my father is from Mexico,which was pretty rare 41 years ago. I have raised 3 step daughters and have 1 from a previous rlatiosnship, my very wonderful husband and I have a son 13. I a very blessed in so many ways, I will run out of space here!
My favorite things to cook
I love to make homemade spaghetti,or manicotti. I had 3 Sicilian Uncles! But I tend to stick to more traditionl southern foods, chicken, pork, bbq, etc. I am always looking for new twists on the old.
My favorite family cooking traditions
My mother taught me how to make cornbread, chicken and dumplings, and crea pies just like her great grandmother. My dad is teaching me to make homemade tortillas, I can do some of the tradiional dishes. But my favorite is on Chrismas Eve my Dad and I make empanadas from scratch. We have a large extended family and everyone brings a tradtional dish(Italian, Mexican, Southern, German,etc.)
My cooking triumphs
Burritos,my dad was proud! Frankly I was shocked! Cornbrad from scratch, which it took me forever to get right.
My cooking tragedies
Homemade biscuits, I'm 41 and still working on it. There have been others but that one was just the worst.

Amish Meatloaf
My family said this was the best meatloaf I have ever made, and my husband doesn't normally even like meatloaf. I thought it was really good, but maybe a little too sweet for me. But if my husband and kids like it that much, I will definitely make this again.

Onion Pan-Fried Pork Chops.
My family LOVED these pork chops. This is so easy and good. I have never written a review before, but for this I had to. I did dip my chops in egg and milk first. I also took others advice and added a small handful fo Italian bread crumbs and a dash of garlic powder to the mix. Once again Really good.
