Easy and yummy. I love bananas. My husband said it seemed a bit dry. I have seen some others say that they added applesauce instead of oil. I will try that next time. I will definitely be making this again. I think it could use more banana's. I used two and half and still would like more of that banana flavor. I baked in 2 small foil pans for about 50 min and I think they turned out wonderful. Soft but not especially moist. Still, I really liked it.

Eggplant Burgers

I didn't like this. My husband and I are both vegetarians. He thought it was ok. Maybe I didn't cook the eggplant slices right. I don't know. But I'd rather have a veggie patty over this. The texture wasn't good and the slices shrink when heated up. If you like meat way too much then this isn't for you. I won't make this again and would rather have a portebello or veggie patty over this. I followed the directions to a T and it just didn't come out well at all.

Quick Brownbag Burritos

It wasn't bad but it wasn't great either. I wasn't big on the salsa/chili powder taste. It seemed too overpowering. I'd add some other stuff that I might like and sour cream. I'd probably do less salsa next time. I haven't made this since the first time.
