Cauliflower Hamburger Casserole
5 stars with these revisions. This is really great for the vegetables/simplicity. I doubled the egg mixture (except only 1.5 cups of milk). I added 1 can cr. of celery and salt/pepper to taste. A great staple recipe to repeat. My husband is a good cook and he really enjoyed it.

Pumpkin Pie Squares
Fantastic recipe! The two reviewers who gave a poor rating - did NOT follow the recipe (one mentioned doubling the nutmeg!) I did double the cinnamon (love it!!). For the 2nd layer mix all ingredients (used fat free evaporated milk) except whipped egg whites which I gently folded into the pumpkin mixture. For the topping: next time time I will chop the walnuts in my chopper (increase walnuts, decrease sugar some). I actually had small chunks of sugar in topping. Also, for a "light" version, omit the bottom crust- it would still be delicious! This is a keeper!

Lots-A-Veggies Stew
I am very glad I found this recipe. Judy did a great job putting it together! Very tasty! I used Campbell's V8 Tomato Herb Soup. With so many ingredients, I did prep ahead 2 days ahead of time (chopping most of the vegetables and browning the beef/onions. I had green pepper already sliced up in the freezer. The soup has a satisfying texture! I will certainly make again.
