Curried Coconut Chicken
Excellent and easy recipe that is extremely versatile. I made some slight changes, cooking the curry in the oil longer, then cooking the onions (I used a whole large sweet onion) and garlic until the onions were totally translucent, as well as adding 1 lb of sliced mushrooms, 1/8 cup of coconut powder, increasing the sugar to just shy of 1/4 cup, and omitting the tomato sauce entirely. We WILL be having this again..it was a major hit with my curry-loving boyfriend and even the 8 year old scraped his bowl clean, though he did add some plain yogurt to "cool" his off about half-way through. We had to force ourselves to leave leftovers!

Chicken Diane Style
Excellent results! We had it over rice with broccoli and everyone cleaned their plates and had seconds. Very tasty and so simple it makes me want to cook more often. I did substitute Disaronno for the brandy as it was what I had on hand, plus I didn't have chives, so I used 1 tsp of dried tarragon instead, because I really love the flavors of paprika and tarragon together. I used about half the amount of chicken and mushrooms for just three of us, but kept the liquid and seasonings the same, and I think the kick up on flavor really made a difference, so when I do a full batch, I will be doubling those amounts.

Ginger Glazed Mahi Mahi
Absolutely delicious, though I baked the fish in the oven for about 15 minutes instead of frying and then thickened the sauce, serving with steamed veggies and rice. I also substituted fish sauce instead of soy sauce, due to being allergic to soy.
