Pesto Chicken Florentine

We loved this! Thanks for the advice on adding extra spinach; I will probably triple the called-for amount next time (doubled it this time). Could have used a little extra pesto, in my opinion, but still very delicious!

Lemon Bundt Cake

The only change I made to the recipe was reducing the oil to 1/2 cup as others suggested. It was delicious! I loved that the batter fizzed and foamed when I added the Sprite. Also, as others said, it takes 45 minutes to bake. Thanks!

Momma's Potatoes

We must have the same Momma, 'cause mine makes these, too! :o) This is a staple in my family. The only thing we add are additional herbs (any Italian, fresh or dried, will do) and garlic. They go great with everything.

Yes, indeed, everyone DID think I bought it at a bakery! Simply delicious. Oh, and bonus: I had leftover mousse that I served up in schmancy stemware just for fun. :o)

Caribbean Jerk Stir-Fry

Found this yummy recipe using ingredient search: I was looking for a way to use 4 bell peppers in one dinner. (I doubled this recipe and...bingo!) My husband and I both really liked this. Thanks for the tip on doubling the seasonings; next time I will probably triple what it called for. Also, I had no plum sauce, but a Thai food site I came across suggested watering down apricot jam as a substitute, and that worked for me!
