1-Dish Taco Bake

YUM! Very good. I had no soft shell tacos and not enough hard shell tacos but wanted some mexican...remembered seeing this recipe. Yummy. A+ Will make again. I added corn kernals to my cornmeal mix. It was a touch dry, but was fixed by adding taco sauce (really good with it) and green/red salsa to it afterwards. Next time, I may pump up the veggies (beans, peppers, etc.).

Crab Salad

Apple Curry Turkey Pita

Very good! I am going make this again. I LOVE curry, so, this is a definite keeper for me. I had to substitute some ingrediients b/c I did not have what was needed, but this recipe is forgiving, so, don't be afraid! Used granny smith apples and deli turkey. Unfortunately did not have plain yogurt so I used some sour cream in its place. Also, I used lime instead of lemon. Still good though. * If you like crunchy, do not cook apples with the onion in the skillet, just follow directions and toss together after warming turkey. I bumped up the spices (like a lot of flavor). delicious.

Snickerdoodles III

These were just okay for us. We prefer flatter, chewier cookies and these were stiffer, "poofier" cookies. I do like the lower butter content and not shortening on this one, so that is definitely a postive. I may still try to find a recipe w/o shortening that results in a chewier cookie.

Cheesy Green Onion Bagel Dip

This stuff is awesome. My husband's family makes this. Here is a good tip..... we ADD garlic salt instead of onions with the cream chease and old english cheese. Delicious. Also, I have used reduced fat cream cheese and it doesn't change the yummy factor :).

Easy Morning Glory Muffins

YUM! I even made a "healthy" version and It was delicious! Very moist and good. I used 1 1/2 cups of whole wheat flour and 1/2 cup of ap, 1 cup of unsweetened applesauce instead of flour, reduced the sugar to 1 cup, left out coconut and nuts, and sprinkled with oats on top. It made 17 muffins this way at about 140 calories each!!! Very very good!!! Loved them.

Vegan Black Bean Soup

This was okay for me. It was good but not "wow, great!" I used chicken stock and sauteed my onions, garlic powder, carrots, and added green pepper first which I recommend. I also used dry black beans which worked great as well. If you are like me and like a lot of flavor, up the spices! Overall an average recipe.

Honey Cashew Green Beans

This was just the "middle of the road" for me. I like it and will probably make it again, however, it wasn't like "wow, oh my goodness, this is great!" It was a very nice alternative to the usual. I served is with teriyaki pinapple chicken sandwiches and the sweetness of the honey was a nice compliment to the meal. I forgot to add the butter, but it was still good.

Thai Tuna Burgers

This was just ok for me. Not great and fantastic but not bad. I used canned tuna instead of fresh, though. Served it as patties and not on a bun (which possibly would have been better). Did have sesame oil but added a touch of rice vinegar. Very healthy though. I didn't get to use wasabi mayo as suggested (wasabi was no good), but I found if you mix the soy and ketchup together, it makes a good topping.

Ginger Veggie Stir-Fry

This was good. I will make it again. I just used a bag of frozen veggie deluxe stir-fry from walmart (1.88 a bag!) so mine did not have sweet potatoes and I did not have any orange juice last minute so I just substituted lime juice for the citrus. I really enjoyed it though. Baked mine in the oven (healthier). No cornstarch; used the juice over rice.

Spicy Chipotle Turkey Burgers

I LOVED these burgers although the hubby thought they were average. Next time, I will add more chipotle peppers & adobo sauce since I didn't think they were very spicy, but oh so good! Maybe add red pepper flakes, too. Unsure what to expect (thought it would be more "mexican" but it wasn't, but not disappointed); The chipotle in adobo added sweet and smoky flavor. I used 85/15 lean turkey and used just a quarter piece of pepperjack cheese in the middle (as suggested) which kept them very juicy. Served with just tomato, lettuce, and mustard b/c unsure how to dress at first. yum.

Mocha Angel Food Torte

This was overall pretty good. I made it for a girl's birthday. Definitely add more coffee unless you like it really subtle. I used a larger angel food cake, so I used more whipped topping lite (not whipping cream). I will say that the milk measurement seemed way off to me. When I first mixed it with just 1 1/3 cup of milk and a 3.9 pudding, it was so thick...too thick. Definitely add more milk. Good, but check out the mocha brownie trifle on this site (which I prefer, but it's not really fat free like this could be). I'd prob make it again.

Spiced D'Anjou Pear Bread

Good recipe! Nice change from traditional banana nut and zucchini breads. Great for the latter holidays! This recipe is very forgiving...and I followed a lot of other suggestions. I used honey instead of molasses (someone said they did), I ran out of brown sugar in the middle of baking and had to use some white sugar to make up the rest, used applesauce instead of oil (someone else also did), AND used 1 cup of whole wheat flour with 2 cups of all purpose. It really turned out great. The recipe is a touch sweet for me personally, but this bread definitely has plenty of spice to it. Will make again for the holidays!

Curried Zucchini Soup

Delicious! Who knew something so simple could be so good? I will definitely make this again. So healthy, too! I did add a few carrots for sweetness, but it may not really be necessary. Also added garlic per someone's suggestion. Also just boiled some onion and used onion powder instead of sauteing in oil to reduce the calories. A++++

Blueberry Crisp II

Very good and easy. I used frozen blueberries and added peaches with them. I did accidently toss in the cinnamon with the blueberry/peach combo itself, but it worked out good. Also used a bit of flour and sugar b.c I used frozen fruit. Me and my husband actually thought it was a little sweet for our prefernce, but that could just be us! Next time I will cute down on the sugar a bit. I also added a touch of ginger to the recipe, too. I made this for a group of ladies and was complement at many times and even asked for the recipe. They couldn't believe it had mayo! I used light mayo, too which turned out fine. others may want to double the topping if they want the entire crisp covered. I will make this again!

Hot Fudge Sauce

Very good. Not what I consider to be the "true" hot fudge sauce at ice cream shops, but still very good. I was a touch sweet for me on its own, but I putit on my ghiradelli dark chocolate brownies (and topped mine with mini reese pieces. it was the best I think I ever had as far as brownies go)...amazing. I did add a little bit of dark chocolate chips to the mix to give it a richer flavor. I'll make it again for my brownies.

Oven-Fried Catfish

Great alternative to fried! The spices were very flavorful! My cornmeal mix didn't crisp up as much as I'd like (I ended up broiling it some to add crisp), but it was still crispy some and very tasty!! I served this with jenn's catfish sauce (also on this website) and the combo was fabulous! This recipe earned a spot in my recipe book! Highly recommend.

Jenn's Catfish Sandwich Sauce

Y-U-M-M-Y! This was very very tasty! Both my husband and I are not crazy about tarter sauce so I thought I'd try this. It was sooo good! Nice alternative. I will definitely use this again. I didn't put it on a sandwhich, but used the oven-fried catfish recipe (also on this site) with it. I did use light mayo (healthier and delicious) and bumped up the ketchup, dill pickle, and worchestishire for my personal liking. Let it set a few minutes at least before serving.

Serbian Ground Beef, Veggie, and Potato Bake

This was just okay. We really weren't that crazy about it, but it was something different. I did up all the spices and omitted the red wine (didn't have any), used milk instead of half & half and added a tad of tomato paste for flavor. It was just okay. Not bad, but not good. Definetly need to add some liquid to the dish...mine kind of dried out and i had to add the water (maybe by beef was too lean ??-93/7). Anyways, just average in my opinion, but could see how some would like it.

Easy Chicken Satay

WOW!!! This was yummy! Me and my husband LOVE Thai food, but it's usually kind of pricey to go out and eat. My husband loved this! I did change some things though...I baked it in the marinade and also, to be healthier, I used lite coconut milk, and in the peanut sauce 3/4 c coc. milk, 1/2 c chicken stock, 1/4 tbs PB, 2 Tbs of b. sugar and added red pepper flakes. Definitely recommend you ADD RED PEPPER FLAKES AND GINGER to the dish...even if you don't like spicy (I don't) to give it kick. Forgot to add some ginger for more spice this time, but plan to next time...trust me, there WILL be a next time! Oh yes, if the sauce gets to thick on the burner just add water to loosen.
