Just Me
About this Cook
I have been married to my husband Jason now for 7 years. We have 3 children 7, 14, & 16. I was born in raised in Fort Worth, Texas. We moved to Florida 4 years ago. Though I love Florida and the many activities that we do with the kids here, I still miss home. Sometimes I find that I cook alot of southern foods just to get that feel of home...even if it's fleeting.
My favorite things to cook
Quick and easy is a favorite just because My husband and I both work full time and we have 3 children...who are constantly hungry! I love to bake and once the mood hits me, I'll bake at least six dozen cookies in a day!
My favorite family cooking traditions
I've started a new one and it has come in very handy. Saturday night I plan a two week dinner menu for 5 people to include leftovers for lunch the next day. Sunday after church I grocery shop and spend the rest of the day cooking a week's worth of food and freeze it. My family loves this new routine and so do I. We get to eat good meals in the middle of the week and I don't have to spend my evenings cooking after working all day. That also means less "fend for yourself nights"...lol.
My cooking triumphs
I cook food that my family eats. That's triumphant enough for me!
My cooking tragedies
This one has always stuck out...please keep in mind I was 12! I decide I was going to bake a banana nut bread and send to a friend. In my haste at getting it done, I wasn't careful in reading the directions. One line called for 1 Cup of sugar...the line below it was 1 tsp. of salt. Apparently I got the two confused and added 1 cup of salt!!!! I had no idea until my mother and I decided to "test" the bread out. I both almost vomited it was so bad! Since then over 20 years now, I always check my ingredients and recheck them again!

Broiled Tilapia Parmesan
Everyone in the house loved it! I'm not a big mayo fan, so I substituted with sour cream and it still came out great. Thanks!

Aaahh! Potato Soup
This is a great soup! I did like another reviewer said and added fresh bacon bits and chives. This soup does not last long in my house! I triple the recipe and it's gone by the next day! It's a perfect recipe for a chilly day. Thanks!!!

Blueberry Sauce
This was a very good sauce. I'm giving it a 4 merely because I think the almond extract was a little too much. Perhaps next time I will lessen it or omit it completely. Other than that, it was a nice sauce for our pancakes.
