Chicken Breasts in Caper Cream Sauce

Sooooooo good! I did alter the recipe somewhat. I used fresh dill instead of dried dill. I also omitted the lemon pepper and simply marinated the chicken in lemon juice, dill, salt, pepper and garlic. I doubled the cream sauce and added additional dill to it as well. This recipe will definitely be a staple in our house.

Yummy Quiche

This was good, but not excellent. I'm not really a quiche person, but my husband is. He very much liked it. I'll most likely make it again.

Easy Batter Fruit Cobbler

This was just alright. It wasn't the best cobbler I've made but for how simple it was, I'd make it again and again. I did however take people's suggestions and added an egg to the batter as well as one teaspoon vanilla. And I also sprinkled cinnamon on top. Very quick and easy which I love.

Slow Cooker Chicken and Dumplings

This was just okay. One entire onion is just too much and adding just enough water to cover is just too much water. Made it really thin. I had to thicken it with corn starch. Also, there's no way that amount of dough would fit into my crock pot- I used half of what it called for. I think if I was to make this again, I'd use milk or cream instead of water and not add nearly as much. But I think I'll just use my usual chicken and dumpling recipe and figure out how to adapt it for slow cooking.

Tuna Noodle Casserole III

This was good! I added a canned of drained peas to it and swapped out the bread crumbs for french fried onions- that was a delicious move! I also didn't layer like the recipe said. I just mixed everything together, grated cheese on top and pour the french fries onion on top of that. I think however, next time I'll add two cans of tuna- but I'll definitely be making this again and again!

Pesto Pasta with Chicken

This was really really good! Even my 2 year old ate it, which is amazing- he never wants to eat anything. I think this would be amazing as a cold pasta salad. I'd throw in some greek olives and cubed smoked gouda cheese too.

Quick and Easy Clam Chowder

This was excellent and super easy!!! I doubled the amount of clam chowder soup and potato soup and added 4 cans of clams to this. It barely fit into my crock pot! I think next time I won't add as much cream to make it slightly thicker. But I will definitely be making this again!

Baked Snapper with Mandarin Oranges, Cashews and Ginger

This was really good! We had clemetines instead of mandarins so used those instead. What surprised me the most, was eating this as a leftover cold- it was delicious cold! Who knew?

Crawfish Chowder

I followed the recipe exactly except for swapping out the crawfish for shrimp and it was excellent! Not too overpowering, which I like in a chowder.

Spicy Red Snapper

This is one of our favorite recipes- we make it a lot. We do however change a few things. We use 2 large shallots instead of using an onion. We also add chili oil to the olive oil when cooking the shallots and add a lot more chili flakes- we like it spicy! And we use chicken broth instead of wine. This dish is great over rice, quinoa or pasta- just depends on your mood.
