Isaac's Juicy Chicken

I give it a 4 for flavor but there are a couple of changes I suggest. First, cut the bread crumbs in HALF, there was more than enough to do a dozen chicken thighs. Second, cook these on a shallow rack in a baking dish, otherwise the bottom half of the chicken pieces get soggy.

Delicious Ham and Potato Soup

No kidding, this was a BIG hit with my family. I too doubled the recipe, added a bit more ham than the recipe called for, used canned broth instead of water, added a couple of fresh minced garlic cloves and some sliced carrots. I also followed another reviewer's suggestion to suatee the celery & onion before adding to the broth. THIS RECIPE IS A KEEPER!!

Barb's Broccoli-Cauliflower Salad

I followed suggestions from previous reveiws by making just half of the dressing, using Miracle Whip as the creamy dressing. Followed to a tee otherwise and this was a sure crowd pleaser.

Arkansas Green Beans

I agree with SWEETJAM who previously reviewed this recipe making 2 alterations. With the reduction in sugar (used 1/2 of what the recipe called for) and using 1 fresh minced clove of garlic, this was a HUGE hit at dinner last night. Way better than I expected.

Beef Tenderloin With Roasted Shallots

Korean BBQ Short Ribs (Gal-Bi)

It may have been the meat and not the recipe but this was not as good as others I have had. I did add the green onions and pineapple chunks to the marinade. It sat in the frige overnight and then some but the ribs were still very tough. The flavor was surprisingly subtle but delicious. I give it 4 stars for flavor.

Squash and Zucchini Casserole

My boys are not fans of tomatoe in veggies so I made a few alterations. First, omitted the tomatoes so to make up for the loss of flavor, I caremlized the onions before layering. I cut the veggies into slices rather than lengthwise for more even cooking. I substituted a mix of Mozzarella (2/3) and cheddar (1/3) for the Romano cheese and finally, I lightly sprinkled the top of the casserole with Italian bread crumbs. The dish disappeared in minutes!

Raspberry Ice Cream

OH MY, Can you say Raspberry Chocolate Chip Luscious?! With VERY subtle additions, you can too! Following the previous raters' advice (naples34102 ) by beating 2 eggs 1-2 minutes, macerate 2/3 cup sugar with 1 tbsp water into berries. Refrigerate for about an hour before pulverizing in blender and removing the seeds with a tightly woven strainer. BE PATIENT, push the pulp through without letting the seeds through. Blend 3/4 Cup sugar into the beaten eggs, added 2 3/4 cups heavy cream with 1/4 cup 2% milk, 1 Tsp vanilla extract and whipping until smooth. Then I melted 2-4oz Ghiradelli semi-sweet chocolate bars and folded the melted chocolate into the cool mixture. Refridgerated for a couple of hours before putting into the electric ice-cream maker. AMAZING!! This is my prepared dessert for Girls night out and is SURE to please.

Beer Butt Chicken

I have been cooking beer butt chicken on my charcoal grill for years, though simplified. I use a can rack, slide the chicken over the 1/2 full can of beer, rub the chicken with olive oil, then sprinkle with Emeril's Chicken Rub. The final touch is to place an onion (or apple) wedge in the neck hole to keep the steam from escaping from the cavity, resulting in a VERY moist chicken. The chicken is usually done in 2 1/2 to 3 hours. This dish disappears like magic EVERY time!
