Kung Pao Chicken
I made it as written. Not enough sauce, so I would suggest doubling it. Also I'm used to kung pao chicken having cabbage in it. Regardless, overall this was pretty good for home Chinese food.

Shrimp Tempura
I didn't have shortening on hand and just used a tsp or so of sesame oil. Also I just used "cold" water, forget the ice. Hard to imagine how this could be improved. Very good.

Mexican Rice II
This was a great Mexican rice. Well, "great" in the sense of most Mexican food I've ever eaten is in a restaurant in America. I like it.
