I'm not patient enought to boil fresh potatoes so I used instant mashed potatoes and mixed in rice flour because I'm gluten intollerant. My husband keeps trying to get me to make them because he loves them so much. We "Americanize" them by adding shredded cheddar cheese, bacon bits, and for me, sour cream. OMG so good.

OMG this is sooooo good. I left the stew on for a couple hours to keep it warm and the meat (used beef) fell off the fork. I'm looking forward to making this again. Oh, you have to add the fresh rosemary, it really adds to the flavor.

My husband made this for our weekend get together with friends, left out the rasins in order not to mess with the flavor of the Irish Stew. Everyone enjoyed.
