Southwestern Casserole
Used the advice of the red pepper, taco seasoning and corn addition. I also switched out the kidney beans with black beans, and I also used a chipolte veggie bean burger, instead of ground beef. It was very filling, and there are lots of left overs. I would suggest using the seeds of the jalapenos. Also, we used plain yogurt instead of sour cream. Less fat.

Chewy White Chocolate Chip Gingerbread Cookies
Tried these out even though it sounds like a Christmas cookie. Brought them to work and two batches were devoured. I would suggest to nix the last step of rolling dough in more sugar, as this cookie is sweet enough to kill a diabetic. Next time I make it, I will cut some sugar. They were pretty tasty.

Blackberry Jam Cake I
Pretty Good, but it lacked something. Everyone at work liked it, but I wasn't 100% happy with it. It needed a glaze, to make it a bit more perfected
