Pumpkin Chocolate Chip Muffins

Not sure why this has so many good reviews. I found them to be dry and bland. Normally I love pumpkin muffins, so I was really disappointed. I did use 3 eggs total and omitted the egg substitute. Maybe that was the problem - maybe need 4 eggs? This still wouldn't solve the blandness issue though. Needs more yummy pumpkiny flavor.

Banana Pancakes II

This recipe is SO GOOD! I must admit that I came across it one morning when I didn't have the eggs I needed to make my normal pancakes and was pleasantly surprised by the results. I didn't have buttermilk either unfortunately, so I subbed a milk/yogurt combo that worked great. I also added 1/2 tsp baking soda per another review. They were incredible! We added chocolate chips for an extra treat! My toddler gobbled them up (even without the chocolate chips). THey were fluffy, tender, and delicious! Definitely try these.

Apple Cinnamon Oatmeal Bread

This was very good. I added raisins and they were a nice complement. Definitely make a streusel topping with 1/2 packet oatmeal, brown sugar, cinnamon, and butter. That's the best part!

Waffles I

These were disappointing. I made the recipe as written and they turned out pretty and golden. However, the texture was dense (despite whipping my eggs) and thick and cakey. I was hoping for something lighter I guess. Perhaps whipping the egg whites seperately would help as some suggested, but that would be a different recipe. Sorry to give a bad review, but these were nothing special. Will not make again.

Eclair Cake

Oh my! This is SO GOOD. I made mine with french vanilla pudding and melted the frosting as recommended. Great taste and so easy to prepare. Not just like an eclair, but the ingredients taste awesome together and that satiny smooth top and layering effect make it so pretty. Can't wait to try it with chocolate grahams and cheesecake pudding! Thanks for the great recipe!

Zucchini Corn Fritters

We love these! I also like that these are a sneaky way to get my toddler to eat some veggies and a great finger food. I usually serve them with bbq chicken. I've added other veggies to them before as well (shredded carrots work well). They also freeze well for later use - good to know because this makes a big batch! No need to add cheese or dip them in ranch. They are tasty as is. You really should try making these. You won't regret it!

Ratatouille

What a perfect dinner! This is easy to make, delicious, and beautiful. You will impress company with this great dish. I serve it with cous cous and put a little mozzarella/parm on top and broil for a couple minutes at the end of bake time. Light, gorgeous veggies, great taste.

Mom's Best Waffles

These waffles are our favorites! They're great, a little sweet. Forget mixes. These are delicious and wholesome! Eat some now and freeze some for later. We even had to make these with rice milk for a while due to some allergy issues and they were still delicious! Highly recommend! Do add vanilla.

Downeast Maine Pumpkin Bread

This pumpkin bread is great! Perfect for an autumn treat. It's delicious as is or made the "healthy way" (applesauce instead of oil, whole wheat flour, etc). This is THE pumpkin bread recipe. Look no further.

Fried Rice Restaurant Style

This was great! I've never made fried rice at home before, but I had all the ingredients on hand and it turned out perfectly. I cooked my rice in broth for extra flavor. It's addictive and EASY!

Clone of a Cinnabon

These are now a Christmas morning tradition! Easy and taste amazing! I make mine the night before, let them rise in a warm (200 degree) oven for 30 minutes or so and then bake while we open our stockings. Awesome recipe! (Athough I must say that the real Cinnabons are better, but these are homemade, fresh and wonderful. We make them year after year!)

Oatmeal Chocolate Chip Cookies III

This recipe is great and has become my only oatmeal chocolate chip cookie recipe! The taste is perfect! Made with salted butter, it's a bit salty - but that brings out the sweet and makes it even better. My only complaint is that the cookies are quite flat after baking, as are most cookies like this made with butter. But the taste can't be beat, so I highly recommend them. I added a little cinnamon to mine too. Yum!
