My favorite dishes to COOK are southern. I will taste-test almost anything, but my favorite eats are Southern, Mexican, and Italian. If I had to choose one item to love from all the foods I really enjoy, it would be an awesomely prepared steak. And for dessert, a traditinally made banana pudding (which I do quite well, thank you!). I was born Southern, I eat southern cooking, and if I never have any other type of food for the rest of my life, I will not be sad. Even when I lived in California, I cooked what I liked, and all my friends enjoyed! My meatloaf, believe it or not. It was always good, but I wanted it to be better. I knew I had hit the right combination when, during a "meatloaf" meal, my kids told me that I had finally perfected it. Now I have to make a double recipe so there is enough for meatloaf sandwiches the next couple of days! London broil. I have tried many techniques...marinades, slow roasting, slow cooker...but I cannot match the taste or tenderness of what I had as part of a catered buffet meal during a conference. The chef would not share any hints, tips, techniques or ingredients with me, so I have ruined many a hunk of meat trying. Help me if you can!
