Bacon Roasted Chicken
DELICIOUS!! Nice recipe. My first time cooking a "whole" bird. Used chicken stock instead of beef stock, and stuffed the chicken with a cut up onion and some garlic cloves. My chicken was about 5 1/2 lbs, so it took about 2 hours to cook. Came out nice and tender! Loved it. I didnt taste much bacon in the finished product though. I used the drippings in the pan to make a nice gravy to go with some mashed potatoes. Yummy to my tummy!!!

Excellent Oatmeal Cookies
Good recipe! My first time making cookies from scratch. I used a little more flour and oatmeal too to give it consistency. I substituted choc chips instead of walnuts cuz I dont really like nuts in my cookies. I cooked half the batch and refridgerated the rest. For those who say these cookies come out flat and fall apart, this is true. I had to bake mine for almost 25 minutes or so. However, I made the refridgerated batch a few days later and they came out even better. I rolled the second batch up into little balls before cooking and they came out perfect!!

Texas Black Bean Soup
Awesome! I tweaked this recipe just a tiny bit, added some more chili powder and a couple chopped up jalapenos, as well as 4 cloves of chopped garlic. Also a few tablespoons of my favo hot sauce Tapatio. WOW. Nice and spicy, just the way I like it! This recipe is fine just the way it is, unless you're like me and dump tabasco on everything ;) I even liked it without any meat added, which is rare for a carnivore like me. Serve with some cornbread and you're happy.
