Baking Powder Drop Biscuits
This recipe is delightfully malleable...I have 4 kids and can't run to the store if I'm missing an ingredient (which I always discover halfway through the recipe preparation!) so I invariably have to just make do...I never have cream of tartar, so I just omitted it. Also, we're pretty health-conscious and try to be frugal (2 things that don't always mix), so I switched out one cup of flour with whole wheat, added 1/4 cup of flax seed, increased the milk to 1 cup and substituted a Smart Balance 50/50 stick for the butter. Admittedly, the white version is slightly more "down-home" than the wheat, but worth it for the health benefit and still LOVELY--crunchy on the outside, the inside melts in your mouth!

Fudge Brownies I
These brownies are STUPENDOUS...I'm one of those people who interprets recipes more as guidelines than exact instructions (sometimes that bites me in the butt), and I still managed to make awesome brownies with this recipe...for example, I didn't have any chocolate squares (really, who keeps those on hand?!) so I substituted 12 tablespoons of cocoa, upped the butter by a tablespoon and added 2 tablespoons of milk. I also left out the walnuts. They were STILL delicious and fudgy and YUM!

Creamy Carrot With Curry Soup
This was SO delicious and comfy, and SO easy...we make it about once a week...a great way to use up carrots (we always have too many somehow) and the curry adds a wonderful kick that cures my Indian Food craving every time! Lovely over mashed potatoes or with Naan to dip!
