Quick and Easy Clam Chowder
I made this on Christmas Eve instead of the usual "long version" clam chowder that I usually make. No one knew the difference. It was very good.

Spinach and Mushroom Casserole
I loved this!! My husband isn't crazy about spinach, which was great because i got to eat the entire dish myself!!!
