Mississippi Mud Cookies
great easy recipe. i was in a hurry and was able to make these within the amount of time that the brownies i was making were cooking in the oven. i'm a coconut lover, so skipped the nuts and used 1c coconut. next time, i'll probably use 2c coconut as it was still very subtle. they are on the sweet side, but the adult kids will find them perfect.

True Blue Custard Crunch Pie
Excellent recipe as is. Have also played around: 1. used the crunch topping on other similar pies; 2. subbed meringue for crunch topping; 3. added a healthy size TBLS of lemon zest to cream filling (Lemon/blueberry combo is personal favorite). All great. Obviously, I've made this several times. The first time, it was gone in less than 24 hours. Made great breakfast! (It has fruit & eggs so it counts.)

Pineapple Coconut Zucchini Bread
Tropical flavors are subtle, yet, still a nice option from traditional zucchini bread. I would up amount of coconut or add some pineapple & coconut flavoring next time. This made three loaves instead of two for me.
