Eggnog Cake

I was so disappointed with this recipe. Followed the recipe to a T. The cake was just ok. Tasted like regular boxed mix to me. The filling was not spreadable at all and the icing was beyond sweet. Add super sweet icing on top of a bland cake with thick looking filling and you get something that just isn't eatable. Maybe a kid with a sweet tooth will like this, but it won't be on my table again. Sorry.

Chantal's New York Cheesecake

I made this using gluten free grahamn crackers and Bob's Red Mill Gluten free flour (1/8 cup instead of 1/4 because GF flour tends to be a bit heavy). I then baked it in a 325 degree oven for one hour, switched off the oven and left it in there for about 4 hours to cool. It cracked, but I think that was my fault because I couldn't help peeking AND I forgot to run a knife around the edges before cooling. Instead of sticking it in the fridge, I used the freezer since I needed it sooner. Everyone loved it and there wasn't a crumb left! I thought is was just "okay", but I'm told I'm my worst critic.

Sloppy Joes II

Pretty good. I was kinda if-y about ketchup and brown sugar. All I could smell was ketchup, but after simmering I have to say the taste was good. Next time I think I will omit the sugar since it was too sweet for me.

Sunny's Creamy Chicken Pork Chops

This was just ok. Made it as per the recipe but when I tried the sauce, it was just to bland and runny. Put it back onto the stove, added spices and cooked a bit more. I did use chicken and it left the breast very tender and moist, so that's a plus. Since the sauce was to thin for me, I mixed it into brown rice. It was good this way. Adding some hot sauce made it better. Thanks. Will use the recipe again, but with some changes.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This is pretty good for a cake made of beans. I made this into a dozen cupcakes and baked for about 22 minutes. It's super sweet though, hence the four stars. I didn't get the crumbly texture some got. They were moist. Next time I think I'll add more chocolate and decrease the sugar.

Okra Patties

Pretty good. I took some liberties with this recipe. Since I didn't have enough okra, I added some chopped spinach. I also used egg substitute for the egg and added some cayenne and red pepper flakes for an extra kick. I also didn't use the veg oil and instead used non-stick cooking spray. Came out really well. Sadly I will never make okra again...I had no idea it was SLIMY! Ewww. Will eat it again, if I can talk someone else into making it for me. Thanks for the recipe.

Enchilada Stuffed Shells

I cooked up some onions and garlic with the ground turkey. Have tried the refried beans but this time used black beans in place of those (I really liked both variations), I used a hot enchilada sauce, mixed in some with the mixture per the recipe and poured some of the dish to avoid dry pasta. Came out well. This dish is different. Will definitely make the filling mixture again, but I think I'll stick to using tortillas instead of pasta. Thanks for the recipe. UPDATE: Used the filling recipe in enchiladas today...the tortillas were off this site too. YUM. Delicious.

Zucchini Brownies

Not bad, but was expecting more chocolate flavor. You can definitely see and taste the zucchini, but I was fine with it. Omitted the nuts; my preference. I was if-y about the recipe since my batter was thick...I had to press it into the pan since it didn't spread. More cakey than a fudgy brownie (a chocolate zucchini cake), but I liked that too. I also tried subbing in applesauce for the oil and I think I like the oil better (even though it isn't that healthy). Spread a no-dairy chocolate frosting on top. Good. Would probably make again with applesauce for a LESS-guilt chocolate fix.

Yum. I liked this one. I halved the recipe since I only needed a very small amount. I also added a tiny amount of vanilla just because I like the stuff. It was so good, couldn't help myself and ate some on a strawberry.

Crazy Crust Pizza Dough

I decided to try this out since I was craving pizza but can't stand dealing with yeast. I halved the recipe since I wanted something smaller and used whole wheat flour instead of regular. Mine didn't spread like I expected it to, so I just pressed and spread it with a damp hand. Baked it about 10 mins without toppings, than an additional 15 minutes with the toppings. Came out great. Definitely more like a flat bread, but a great substitute to satisfy those cravings.

Vegan Brownies

I didn't like them. They didn't have much flavor to them and the texture was a little weird (not fudgy at all). Mine baked for about 23 minutes, any more time and they would have been way to overbaked.

Pecan Tassies

Not what I expected. I've had pecan tassies that are delicious; these are just ok. I didn't like the consistency of the filling and I think it needed something else. The dough itself was pretty tastless...as I was making it I kept thinking that there should be something else in it, but I still stuck to the recipe stated. I think I'll keep looking for other recipes.

'So This Is What Heaven Tastes Like!' Cream Cheese Bars

So after a comparision, I've come to the decision that some recipes just weren't meant to ne "healthified." I made an 8x8 following the recipe ingredients and another 8x8 subbing in other ingredients. My so-called healthier version just didn't come close. Definitely stick to the recipe next time, just don't eat to many if I don't want to be bigger than a size 2. LOL

Cinnamon Griddle Cakes

Reading the reviews, I expected them to really taste like a cinnamon roll, but I was disappointed. I didn't like them as much as I thought I would. They were kind of heavy and the batter didn't really spread; it just dropped in globs. Maybe it was my fault because I didn't use the corn syrup. I don't think that would have made much of a difference in the lack of cinnamon roll taste, but maybe in the 'spread-ability' yes. I won't be making these again though. I'll just stick to my usual pancake recipe and add some cinnamon.

Baked Zucchini Chips

Yumm-O! I really liked these and I've never been a big fan of zucchini. Used egg substitute in place of the egg whites and added garlic powder per some reviews. I also sliced them thinner and baked them for an extra 5 minutes on each side for some extra crunchiness. They were wonderful with some spicy ranch for dipping. Glad I bought some extra zucchini!

Homemade Black Bean Veggie Burgers

I used thawed green peppers from the freezer and egg substitute in place of the egg. I also use an ice cream scooper and scooped them directly onto a cookie sheet, topped them with plastic wrap and pressed down to flatten. Stuck the whole cookie sheet in the freezer and froze them before baking. The smell was delicious as well as the flavor. Baked them for about 15 minutes, flipped them and baked for another 15. The only bummer was that a couple fell apart when I went to flip them. Ate them with a little ketchup and some extra hot sauce. Will make again.

Perfect Cheesecake Everytime

Followed the recipe and cooked it for 30 minutes, then left it in the oven overnight per one of the reviews. It just didn't look cooked enough in the morning.After stressing over the appearance, I opted to chill it and hope it firmed up well. You'd think spending the entire day in the fridge would help...it didn't. When we sliced into it, it was too soft and didn't retain shape, more like pudding. The flavor was great just not the "look."
