Bob's Stuffed Banana Peppers
I really enjoyed the peppers, although they were very time-consuming. I used only 1/2 of the filling ingredients called for (after reading other reviews), stuffed 10 peppers, and still had leftover filling. I ended up doubling the sauce recipe and used the leftover filling to make (20!) meatballs -- I baked the meatballs/sauce along side the peppers. Very tasty -- I stuck to hot sausage and skipped the sweet sausage.

French Ham Cheese and Egg Fondue Casserole
This was a very good recipe, although it was a bit salty. I was worried about the large amount of ham called for, especially since I was feeding a group who is trying to watch their salt intake. I found a turkey ham product that had half the sodium but the dish was still salty, maybe because of the cheese. It was extremely tasty and lighter than expected. Would make again (will try a reduced-sodium cheese).

Artichoke Chicken
This had a nice flavor -- I used light mayo and added a salt-free garlic and herb seasoning to make up for the lack of marinated artichokes. I also sprinkled the tops of the chicken with Italian breadcrumbs for some added punch. Nice and easy dish.
