Bacon Tomato Chowder

The bacon gives this soup an interesting soup. I used one can of Rotel tomatoes and one can of regular tomatoes so it was a tad bit spicy, but good. I think I added too much 1/2 and 1/2 so then I threw in a small can of tomato sauce. Served with grilled cheese sandwiches. Yummy!

Golden Pork Chops

T's Sweet Potato Fries

These were delicious, but I didn't read the other reviews that said skip the pre-cooking in the microwave until I had already cooked them. They were a bit mushy. Will use less olive oil next time and skip the pre-cook. Would have given this a five star if they weren't so soggy. Still tasted wonderful!

Love the Mama Lemon Bars

These lemon bars are delish. I had two small problems with the recipe as it's written. First, after mixing the filling, I decided to double it as other reviewers suggested. I also used a 8x8" square pan instead of the 11x7". There was barely enough crust to cover the bottom of my pan so I have no idea how you are supposed to cover the 11x7 w/o doubling the crust recipe, too. The upside is they are good and were a hit with my entire family...even my 2yo.

Made this for a family birthday and it was a big hit! It's wonderfully rich so I'd suggest cutting your slices small. It might be even better with an oreo crust!

Pumpkin Cheesecake in a Gingersnap Crust

Made this for Thanksgiving bc I'm not a huge fan of pecan or plain pumpkin pie. This will be a holiday staple in our house now! Gingersnap crust is a wonderful compliment to the pumpkin yumminess.

Chocolate Cookie Cheesecake

I made this for my Dad's birthday and we all loved it. It's super rich so I'd suggest starting with small slices. It is the toughest cheesecake I've ever made, but well worth the time and effort. It looked beautiful on the cake platter. Looked and tasted just like Cheesecake Factory. Delish!

Banana Pancakes I

Yum! Yum!! I make pancakes at least once a week (ok, I'm a bit of a pancake junky) and these are great. My kids eat em up every time. It's a great way to get rid of some ripe bananas. I sometimes add some oatmeal to the batter which makes them a bit more substantial.

Egg Casserole

Made this for Easter breakfast. It was good...a bit salty, but good. I used less bread and went with wheat. I only used 1 lb. of bacon bc that's all I had...will use more next time. It was a bit dry, but this can be easily alleviated by cooking for a shorter time. Will make it again.

Three Cheese Garlic Scalloped Potatoes

Made these for Easter dinner and they are delicious! The parmesan layer on top gets crusty and was the best part. I might turn on the broiler for just a few minutes to brown it up even more next time. There's way too much butter...will use much less next time. At the half way mark of cooking, I drained some butter with a spoon. Did make a small change: I used a mixture of heavy cream, sour cream and 2% milk.
