German Sweet Chocolate Cake I
DO NOT ATTEMPT TO MAKE THIS RECIPE USING AN OLD-SCHOOL, MANUAL HAND MIXER!!! (unless you want to be super buff.) I made this at my friend's house; she doesn't have an electric mixer, so I did it low-tech. Lots of work, but it turned out great...and bonus: I felt like I deserved the calories!

Chicken Enchiladas with Creamy Green Chile Sauce
My sis -- who lived in Santa Fe for years and is picky about green chile -- loved these. Leftovers did not last long! We topped w/ plain yogurt and green chile salsa. (Also, I just microwaved the tortillas a couple at a time for a few seconds to make them pliable enough to roll up...)

Apple Crisp IV
Followed the recipe *almost* exactly (ran out of butter, so we were short 1/4 cup). Mmm-mm-good! MUST be eaten w/ a scoop of ice cream or frozen yogurt. I'm 4.5 months pregnant and I swear Baby wiggled with pleasure when I was eating this for dessert!
