Sweet Potato, Carrot, Apple, and Red Lentil Soup

The BEST soup - beautiful color! Can't wait to share it at work tomorrow. I followed pretty close to the recipe but had to use what was on hand - olive oil, chicken stock, ground ginger, brown lentils, and I did add a splash of apple cider vinegar and a bit of coconut milk. Partial puree. Divine!

Easy Chicken Tortilla Soup

This was surprisingly delicious. I followed some of the other reviewers recommendations and added one can cream of chicken, one box of chicken broth, half a packet of taco seasoning, some cumin and a pinch of cayenne. I poached my chicken breasts in water with some taco seasoning. Served with grated mozzarella and a dollop of sour cream. Extra good second day.

Six Can Chicken Tortilla Soup

Pineapple Upside-Down Cake VII

Super easy and delicious! I used 1/2 each light and dark brown sugars for more color, and a little less than called for. Used my cast iron skillet and it took about 45 mins. to bake.

The McCuddy

I was nursing a cold on a cold dreary day and thought this drink might hit the spot, and boy, did it! This is my new hot toddy. The slight amount of milk imparted a silkiness that smoothly bound the other ingredients together, making it easier on the tummy. Wonderful.

Very good! This didn't last long in my house, but next time I will bake in a smaller pan. Oh, I also used 1/2 cup white and 1/2 cup brown sugar.

Pecan Sandies

Yields tender, melt in your mouth cookies -- these put store bought to shame. I toasted the pecans and used 1/2 white and brown sugars, also used one stick of margarine and one stick of butter because that's what I had. Preheat oven while dough is chilling. Don't overcook, and watch carefully if using a dark cookie sheet. I had to pull the ones on the dark sheets a minute or so earlier. I made these as a gift for my Grandfather's 94th birthday. A big hit!

Cherry Almond Coffeecake

This is more cakelike, but good for what it is - quick, easy, and satisfies a sweet tooth. I made mine with apple filling and added a bit of cinnamon to the top before baking and to the glaze; topped with toasted walnuts. It took about 40 minutes to cook in my 13X9 baking dish. Husband gave it 5 stars, and I gave it 3, so we settled for 4.

Creamy Pimento Cheese

This is a keeper. I add chopped olives, a bit of the juice, and a dash of cayenne. A hit at my Christmas buffet. Very very good.

Flourless Peanut Butter Cookies

I miss the flour! These are peanut-buttery, indeed, but I prefer a more traditional cookie. They are a bit chewier than I like. My husband loves them.

Chai Tea Mix

Absolutely delicious and satisfying. Only changes I made was 2 c. sugar, 3 tsp. ginger and cinnamon, 1-1/2 tsp. cloves, 1 tsp. cardamom, scant tsp. allspice and nutmeg. Used an immersion blender to mix -- worked so-so. Ended up straining the hot tea into another cup -- fabulous! Will follow directions and ground the spices first, next time I make this.

Key Lime Pie VII

Key Lime Pie is my favorite and this one is just delicious. I used 1/2 cup key lime juice per pie, but I think ideally right between 1/2 and 3/4 cup would be perfection. A snap to make.

Cranberry Walnut Relish I

As good as it is easy! I'll never go back to the canned stuff again. This relish has a crunchy tang and an ever so slight 'bitter' that is very appealing. Addictive. Needed only little over half jar of the marmalade for a perfect consistency.

After-Thanksgiving Turkey Soup

Very flavorful and easy. I used yolk-free egg noodles due to kids' preference. Remove the meat from carcass b4 boiling, else it will be tough. Makes plenty to share.

Hasty Chocolate Pudding

Mine turned out a bit thick the first time - will reduce the cornstarch and cooking time a bit next time I prepare. I added a bit of butter and just one tsp. vanilla. The pinch of salt is probably a good idea. Chocolatey and satisfying. Excellent for time involved. 4 stars because it's not quite as good as Grandma's.
