Mexican Rice II

Made this with Fajita seasoning instead of the cumin and garlic, and salsa instead of the tomatoes - really, really good. Added some frozen corn to it as well...

I liked this, but i did find it to be a little salty. Next time i will try it with a low-sodium sauce and maybe cut back on the sesame oil a bit. But it was better than most Tilapia recipes that i've tried, and i think it would be great with Salmon too.

Crispy Orange Beef

This was a great alternative to take-out chinese food! I also used OJ instead of concentrate (1/3 cup) and added minced ginger and red pepper flakes to the sauce. I followed other reviews and let the beef (used a london broil sliced very thin) sit in the cornstarch for a few minutes. Served with rice and a broccoli/red pepper/onion stir fry. Thanks!
