My favorite things to cook
Love to cook chicken marsala, really any kind of pasta. Love to make enchiladas and experiment with different kinds of tacos (not the storebought hard shells yuck!). I like any recipe with lots of chopping, I am in love with my chef's knife : )

My cooking triumphs
I am not so good at baking but last year I ROCKED the chirstmas cookies!! Peanut butter kisses, chocolate terds (not really their name haha) snickerdoodles and of course pretty sugar cookies :) EDIT- My new cooking triumph, SUSHI! Never thought I could master the art but man am I getting close! Yum yum

Fierro Chicken
This was awesome! I didn't have enchilada sauce on hand, so I combined taco sauce with some leftover tomato sauce and a splash or 2 of tapatio to sub. I browned my chickn breast withh S&P to seal in the juices before topping with the sauce mixture, I also cooked the mushrooms in a little wine to draw out some of the liquid before topping the chicken with them, and of course the cheese! Once this came out of the oven I garnished with some cilantro. Excellent sauce, great new recipe for chicken, goes great with mexican rice. Thanks for the recipe!

Pumpkin Brownies
These were just ok. I am no baking expert, but I think 2 eggs would have made them more "fudge like" and thus more of a brownie in my mind. They seemed much more of a cake than a brownie. That being said, maybe a nice cream cheese frosting would have helped, or just one less egg. I also thought the walnuts seemed a little out of place, wish I would have saved them for choco chip cookies. Sorry, I don't think I will try this again : /

Steakhouse Black Bread
This bread is absolutely AMAZING! Didn't change a thing with the recipe. I did divide into just 4 small loaves, and baked for 25 minutes. They were absolutely fabulous! Tasted very similar to "Black Angus" restaurant bread. It was very moist,great flavor, fresh and SO GOOD! A keeper for sure !
