Broccoli-Stuffed Sole
This does not sound like it should taste good (cheese and broccoli...ok, sure, but with fish??! eew)— but trust me, it was delicious and not hard to make at all. I had a big bunch on hand, so I chopped scallion to both the filling and the sauce. And the rice I used was brown– still tasted good. Rave reviews from the family.

Fresh Tomato Sauce
I agree this recipe is more of a vague idea than a real recipe. Also, you'd have to be pretty skilled to mince 6 tomatoes, 3 onions, 2 peppers and 4 cloves of garlic all in 5 minutes! Right.. Prep alone took 25 min. A nice way to use up summer produce. I added a sprig of rosemary in at the beginning, pureed a bit with a hand blender (after cooking more like 40 minutes) and then added a big handful of fresh chopped basil and parsley at the end. Simple and tasty if you have good fresh ingredients.

Matzo Apple Kugel
Made this for 2 passover dinners and guests at both loved it and asked for the recipe. I used raisins instead of cranberries and a bit less sugar on the top than what was called for. It is really more of a dessert than a dinner item- almost a matzo bread pudding. Very, very easy to make.
