This is a quick and easy recipe that yields a lot of food. They weren't quite the enchiladas I was hoping for, but still good. I will likely make these again, but next time I'll add another can of enchilada sauce.

Followed the recipe exactly and initially thought it was too mayo-y and I couldn't taste the jalopeno flavor at all. I added significantly more jalopenos, but still thought it was lacking. I refridgerated it and served it warm several hours later and it had somehow gotten much more spicy. I've never cooked with jalopenos so I wonder if that is normal or just a fluke. Either way, the dip was a HUGE hit. Everyone loved it.
