Breakfast Pies

This was a success all around. I initially made it as written, but it can be easily modified to meet the needs of an individual family. I can see using hot sausage, turkey sausage, or vegetarian if the need called for it. I didn't use the turkey baster egg trick, but I have a bowl with a pour spout that made adding the eggs simple and mess free. I had to get out the rolling pin to get the biscuits big enough to line my cups, and my prep time was probably closer to 30 minutes.

Chicken In Basil Cream

Delicious sauce!! Hit with husband and preschooler! Only modification was I used seasoned bread crumbs, just because that is what I had. Definitely adding this to the permanent file, it was fast, easy, and delicious.

Chocolate Waffles I

This was a hit in my house. I made one variation, adding 1 additional tablespoon of cocoa powder, and found them plenty chocolately enough. I didn't make the sauce, choosing instead to use powdered sugar and whipped cream. My 5 year old liked them quite a bit, and my husband described them as "good" which is pretty high praise. Mine were not crispy on the outside, but the texture was not unpleasant at all. I used an inverted belgian waffle maker, and got 4 1/2 waffles. I also did not have the difficulty with sticking that others described, but I do have a nonstick surface on my waffle maker and I used cooking spray. While this recipe did not "knock my socks off" it is a good solid recipe that is going to become a regular part of our family menu.

Kaese Spaetzle

This was my first attempt at making spaetzle and it was a great success. I split the batch, tossed 1/3 of it with cheddar cheese for my 4 year old (who can be finicky) and she declared it much better than macaroni and cheese (you know, the blue box). The rest I served as a side to our New Year's Day pork and sauerkraut. My very Polish husband stated it was as good as his mothers and I intend to make this a regular side dish in my house.

Focaccia Bread

This was delicious and easy! I did proof my yeast, but it very well may work without it. (Water should be about 125 degrees if you are trying that) I used olive oil in the dough rather than vegetable oil and did not add mozzerella (none on hand) Looking forward to using the leftovers for sandwiches.

Pumpkin Roll Cake

This was delicious and fairly easy. I did not use nuts because I have small children and they do not like nuts. I had a little trouble with removing the waxed paper from the edges and I want to try parchment paper next time. I was pretty intimidated by the turning out and rolling process, but both were easy.

Chicken Noodle Casserole II

This was good, but I plan some modifications next time. I used real chicken and added a small amount of milk to the mix. The noodles were soft all the way through. I think I'll try different soups, perhaps cream of celery. I'm curious if 1 can of cream of mushroom and 1 can of cream of chicken would do the trick as the cream of "chicken and mushroom" seems expensive! My 3 year old not thrilled with this dish.

Spaghetti Pie II

This recipe is great for families, and easily adaptable to your family's special tastes. The only change I made was using ricotta rather than cottage cheese. My toddler ate this well (picking out the peppers) but given how hard it is for me to get her to eat protein this was wonderful!! My husband, who hates all casserole type things on principle, graded it as okay. (Trust me this a great compliment). I did have trouble fitting the ingredients into a pie plate though -- stuffed it in a quiche dish quite successfully.

Three-Berry Lemon Trifle

This was easy and well received at my recent 4th of July party. I would recommend more (double) fruit than the recipe calls for, but that is an issue of personal taste, I don't think I will use the slivered almonds on the next batch.

Grilled Sea Bass

Fabulous!! I cooked mine under the broiler (to dark to grill) and it was wonderful. Only substitution was Onion Salt (replacing onion powder and salt) because I was out.

Italian Style Chili

My 2 year old loved this -- it struck me as a nice hearty pasta sauce -- with kidney beans. I must be missing the point, but I won't repeat this recipe. I gave it 4 stars because of my 2 year olds enthusiasm.

Buttermilk Pancakes I

This turned out GREAT!! I've been on a quest for "perfect" pancakes for several months now, and after a dozen different recipes, I am very happy with this one. That said, this was my second attempt at this recipe -- made grevious errors the first time. I did not use a blender, I wisked by hand and ended up with a thicker batter. (Really don't want to dirty my blender unless its absolutely necessary.) I also have not tried the other buttermilk pancakes recipe with rave reviews because it just makes too many pancakes for my family right now -- maybe in a few years.

Grilled Chicken Skewers with Mango and Pineapple

This was okay, but not fabulous. My husband wanted more heat, my two-year old less heat. It was hard to taste the "ranch" base of this, which is either really good or really bad depending on your position on ranch. She did enjoy the grilled mango and pineapple though. Don't think I'll repeat this one. There are too many other really good skewer recipes out there to put this one in the "permanent" file. Worth a one shot test run for anyone though.

Banana Pancakes I

My toddler and I loved this recipe. My husband was not wild about the combination of bananas and maple syrup, and suggested other toppings -- something to work on in the future. This recipe was moister and heavier than a standard pancake due to the banana. Think banana bread vs white bread and you'll have a good parallel. If you're expecting a light airy pancake with bananas you'll be disappointed, but we liked the result as written.

German Apple Pancake

My family loves this recipe. We really enjoy the different tastes and textures this recipe gives from common pancakes, waffles, or french toast. The nutmeg in this recipe is heavy, so if you don't care for it you'll have to adjust. I did have an oven-proof skillet though next time I'll choose a different shape with steeper sides.

Honey Ginger Grilled Salmon
