Asparagus Cashew Rice Pilaf
I registered with allrecipes today just so that I could write a review for this recipe. I use this site often but this recipe inspired me to write. This was so good. I used almost a cup of diced onions and chicken broth instead of vegetable broth. Also, I used almonds instead of cashews. My boyfriend and I each had this twice today already...all of it is gone! Delicious! It isn't particularly gourmet, but it is easy and a wonderful side dish. We had ours with roasted salmon with mango salsa. YUM!
