Great flavor. As some other posters noted, this does make a lot of sauce for the amount of carrots. Next time I will halve the amount of sauce so less butter is wasted in the bottom of the pot at the end.

The flavor was great though the previous reviewers are correct that the consistency is more like a dip. For more of a side dish texture I would add more veggies. For a great artichoke dip just make it as it and mash is up a little!

simple stuff is somtimes best!! My daughter prefers "pink" applesauce (with berries added) and I could not find a pink applesauce recipe here so I just modified this one: I subsituted 1/4c of strawberry jam for the 1/4 c of sugar and it was a big hit. (I also cut the cinnamon back to 1/4 tsp with the berries in it).
