Chili Verde Stew
A great overall recipe. I used a 2 pound beef pot roast instead of pork. Sauteed onion, garlic, bell pepper and jalapeno (2) and threw everything in the crockpot for 8 hours. I left out the cumin, cloves and sugar and added fresh rosemary instead. The flavor is wonderful. I think next time I will add more jalapenos, you couldn't even tell two were there....maybe some jalapeno juice from the can would kick it up a bit.

Beef and Mushroom Stuffed Peppers
I didn't pre-cook the peppers or the hamburger, just upped the oven time to approx. 45 to 50 minutes. I also used BBQ sauce instead of gravy and pepper jack cheese.

Citrus Marinated Cuban Pork Chops
Overall, I think there are too many competing flavors, especially with the added "zest" from the limes and oranges. It was a bit too much. Perhaps less zest and more juice would create a better blend of flavors. Also, if you make it as written, I don't think I would add the extra reserved marinade over the finished product. If you do, taste test first.
