Barbadian Plain Cake
Being a Bajan, I have to say that this cake is right on! It is a true pound or "pudding" cake as it is very dense. Adjustments: 1. Baked at 400 degrees for the first 10 minutes and then at 325 degrees for an hour. 2. used 1 tablespoon of authentic Bajan essence and 2 teaspoon of almond extract. Yummy!

Chantal's New York Cheesecake
Very delicious! I made a sour cream topping that was spread over the cheesecake after it was cooled; the top cracked and I wanted a nice presentation. I then chilled it and served!

French Toast I
Very easy to throw together and the spices add such a yummy taste. Used thin sliced bread and did NOT submerge into batter- just quickly dipped and added to my hot pan. My nephew (3) and son (9) gobbled this toast up in no time at all.
